4 peaches, sliced and peeled
Streusel
65g white sugar
80g plain flour
45g unsalted butter melted
Cake
180g self raising flour
½ tsp baking powder
½ tsp salt
50g softened unsalted butter
50ml vegetable oil
150g caster sugar
2 eggs
1 tsp vanilla paste
120ml whole milk

2.8oz plain flour
1.5oz unsalted butter melted

6.3oz self raising flour
½ tsp baking powder
½ tsp salt
1.7oz softened unsalted butter
1.7oz vegetable oil
5.3oz caster sugar
2 eggs
1 tsp vanilla paste
4.2oz whole milk
Instructions
- Preheat your oven to 160°C (320°F) and grease a 9 inch round cake pan or a similar-sized baking dish.
- To make the streusel topping, mix together the white sugar, plain flour, and melted butter in another bowl until you have a crumbly texture. Set this aside as well.
- For the cake batter, in a separate large mixing bowl, cream together the softened butter, vegetable oil, and caster sugar until it's light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla paste.
- In a separate bowl, whisk together the self-raising flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the whole milk. Start and finish with the dry ingredients. Mix until just combined; be careful not to overmix.
- Pour the cake batter into the prepared cake pan and spread it evenly.
- Arrange the peach slices on top of the cake batter, creating an even layer.
- Sprinkle the streusel topping evenly over the apples.
- Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean, and the top is golden brown.
- Once baked, remove the cake from the oven and let it cool in the pan for about 15 minutes.
