Apple Crumble Cake

Apple crumble is easiestly one of the BEST desserts to exist,so when you mix it with a cake it's like a warm, cozy hug in dessert form. It's a delightful combination of tender apple slices layered in a moist cake base, generously topped with a sweet and crunchy crumble topping. This dessert is the perfect blend of fruity goodness and comforting textures, making it a favorite for any occasion or just a sweet treat to enjoy with a cup of coffee or tea.
Ingredients
Apples
4 granny smith apples, sliced and peeled
1 tsp cinnamon
1 tbsp light brown sugar
Streusel
65g white sugar
80g plain flour
45g unsalted butter melted
Cake
180g self raising flour
½ tsp baking powder
½ tsp salt
50g softened unsalted butter
50ml vegetable oil
150g caster sugar
2 eggs
1 tsp vanilla paste
120ml whole milk
1 tsp cinnamon

- Preheat your oven to 180°C (350°F) and grease a 9-inch round cake pan or a similar-sized baking dish.
- In a mixing bowl, combine the sliced and peeled apples, cinnamon, and light brown sugar. Toss the apple slices until they are well coated, and set them aside.
- To make the streusel topping, mix together the white sugar, plain flour, and melted butter in another bowl until you have a crumbly texture. Set this aside as well.
- For the cake batter, in a separate large mixing bowl, cream together the softened butter, vegetable oil, and caster sugar until it's light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla paste.
- In a separate bowl, whisk together the self-raising flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the whole milk. Start and finish with the dry ingredients. Mix until just combined; be careful not to overmix.
- Pour the cake batter into the prepared cake pan and spread it evenly.
- Arrange the apple slices on top of the cake batter, creating an even layer.
- Sprinkle the streusel topping evenly over the apples.
- Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean, and the top is golden brown.
- Once baked, remove the cake from the oven and let it cool in the pan for about 15 minutes.
- After cooling, you can serve your delicious Apple Crumble Cake warm or at room temperature. It's perfect on its own or with a hearty portion of custard.
