About this recipe
Jammie Dodgers are one of England's most beloved biscuits and so easy to make and can be made vegan friendly too! Let me know if you give these a try
Ingredients
Dough:
100g unsalted soft butter
100g caster sugar
75g icing sugar
1-3 tbsp water
1 tsp vanilla essence
250g plain flour
Filling:
6-10 tbsp strawberry jam

Instructions
- Mix butter and sugars until mildly creamed.
- Add the your flour and mix this with your hands or a wooden spoon, the mixture will be like breadcrumbs!
- Add a tablespoon of water and keep mixing until it forms a dough, do one at a time to not add too much liquid
- Once formed a dough roll it to a depth of 5mm and cut out your biscuit with a cookie cutter
- Freeze your cookies for 15 mins or until hard to touch
- Bake for 13 mins at 170°C ( keep your eye on these you don't want these to brown!)
- Once your biscuits have cooled, spread the jam on your biscuit and sandwich the top biscuit together.
