Banoffee Pancakes
Ingredients
Pancakes
150g self-raising flour
1 tsp baking powder (very important to make sure this active)
1/2 tsp salt
3 tbsp sugar (caster or granulated)
150ml milk
1 egg beaten
Banoffee Topping
2 bananas
35g unsalted butter
65g brown sugar
50ml double cream
handful of walnuts

Instructions
- In a medium sized bowl add all dry ingredients and wet ingredients and whisk until smooth
- Grease your frying pan or griddle and add your mixture, when frying pancakes the key to fluffy pancakes is low and slow.
- For the Banoffee topping, in a frying pan melt butter and add your brown sugar
- Once this starts bubbling add your double cream until thicken
- Add your chopped bananas and coat in caramel sauce, you don’t want to mix it too much or the bananas will become mushy.
- Top banoffee mixture and walnuts on pancakes and enjoy!
