Banoffee Pancakes

Ingredients

Pancakes

150g self-raising flour

1 tsp baking powder (very important to make sure this active)

1/2 tsp salt

3 tbsp sugar (caster or granulated)

150ml milk

1 egg beaten


Banoffee Topping

2 bananas

35g unsalted butter

65g brown sugar

50ml double cream

handful of walnuts

Ingredients

Instructions

  1. In a medium sized bowl add all dry ingredients and wet ingredients and whisk until smooth
  2. Grease your frying pan or griddle and add your mixture, when frying pancakes the key to fluffy pancakes is low and slow.
  3. For the Banoffee topping, in a frying pan melt butter and add your brown sugar
  4. Once this starts bubbling add your double cream until thicken
  5. Add your chopped bananas and coat in caramel sauce, you don’t want to mix it too much or the bananas will become mushy.
  6. Top banoffee mixture and walnuts  on pancakes and enjoy!
