These Croque Monsieur-inspired croissants feature flaky pastry filled with savory ham, onion chutney, and rich cheese sauce, baked to golden perfection. Perfect for a special breakfast or brunch.

- 12 slices of ham (I used Brunswick Ham)
- 6-8 tsp onion chutney

- 30g butter
- 1 tbsp + 1 tsp plain flour
- 325ml milk

Cheese Sauce
- 1.07 oz butter
- 1 tbsp + 1 tsp plain flour
- 11 oz milk
Instructions
Prepare the Cheese Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Once melted, add the flour and whisk continuously to form a smooth paste (this is called a roux).
- Gradually add 1/3 of the milk at a time, whisking constantly to avoid lumps. Cook until the sauce thickens and can coat the back of a spoon.
- Add the grated cheese to the sauce and stir until fully melted and smooth. Season with salt and pepper to taste. Remove from heat and set aside.
Assemble the Croissants:
- Preheat your oven to 190°C
- Slice each croissant in half horizontally.
- Spread 1-2 teaspoons of onion chutney on the bottom half of each croissant.
- Place 2 slices of ham on top of the chutney.
- Spoon a generous amount of the cheese sauce over the ham and a sprinkle of cheese.
- Place the top half of the croissant on top.
Bake:
- Place the assembled croissants on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-15 minutes, or until the croissants are golden and the cheese sauce is bubbly and slightly browned.
- Remove from the oven and let them cool for a couple of minutes before serving. Enjoy your Croque Monsieur-inspired croissants warm!
