Blueberry cheesecake toast is a delicious dessert-inspired treat featuring a creamy cheesecake spread on toasted bread, topped with fresh blueberries for a burst of sweetness. It's a delightful combination of flavors and textures that can be enjoyed as a breakfast or dessert option.

Ingredients

Custard:

  • 1 egg
  • 3 tbsp milk
  • 1 tbsp sugar
  • 1 tsp vanilla essence

Blueberry compote:

  • 100g blueberries
  • 1 tbsp sugar

Cheesecake:

  • whipped ricotta but you can use cream cheese too!

Custard:

  1. In a bowl, whisk together the egg, milk, sugar, and vanilla essence until well combined.
  2. Then dip your bread of choice into the custard and fry until golden brown on each side.

Blueberry Compote:

  1. In a separate bowl, combine the blueberries and sugar.
  2. Microwave in burst of 15 seconds, stirring occasionally, until the blueberries soften and release their juices, and the mixture thickens to a compote-like consistency. This should take around 1-2 minutes.
  3. Remove the blueberry compote from heat and let it cool.

Cheesecake:

  1. Take the whipped ricotta and place it in a bowl. If you cannot find whipped ricotta, you can whip regular ricotta with a hand mixer until it becomes smooth and fluffy

Assembling the Blueberry Cheesecake Toast:

  1. Spread a generous layer of the whipped ricotta on each toasted bread slice.
  2. Top the toast with a spoonful of the blueberry compote.
  3. Optionally, you can sprinkle some extra blueberries or a dusting of powdered sugar on top for added garnish.
