Blueberry cheesecake toast is a delicious dessert-inspired treat featuring a creamy cheesecake spread on toasted bread, topped with fresh blueberries for a burst of sweetness. It's a delightful combination of flavors and textures that can be enjoyed as a breakfast or dessert option.
Ingredients
Custard:
- 1 egg
- 3 tbsp milk
- 1 tbsp sugar
- 1 tsp vanilla essence
Blueberry compote:
- 100g blueberries
- 1 tbsp sugar
Cheesecake:
- whipped ricotta but you can use cream cheese too!

Custard:
- In a bowl, whisk together the egg, milk, sugar, and vanilla essence until well combined.
- Then dip your bread of choice into the custard and fry until golden brown on each side.
Blueberry Compote:
- In a separate bowl, combine the blueberries and sugar.
- Microwave in burst of 15 seconds, stirring occasionally, until the blueberries soften and release their juices, and the mixture thickens to a compote-like consistency. This should take around 1-2 minutes.
- Remove the blueberry compote from heat and let it cool.
Cheesecake:
- Take the whipped ricotta and place it in a bowl. If you cannot find whipped ricotta, you can whip regular ricotta with a hand mixer until it becomes smooth and fluffy
Assembling the Blueberry Cheesecake Toast:
- Spread a generous layer of the whipped ricotta on each toasted bread slice.
- Top the toast with a spoonful of the blueberry compote.
- Optionally, you can sprinkle some extra blueberries or a dusting of powdered sugar on top for added garnish.
