Ingredients

Chicken:

600g chicken thigh fillets, chopped into chunks

1 egg, beaten

300g cornflour

Chow Mein:

1 large onion

5 spring onions, cut into thirds

100g bean sprouts

500g cooked noodles

3 tbsp sesame oil

3 garlic cloves

3 tbsp dark soy sauce

2 tbsp light soy sauce

1 tbsp MSG

1 tsp sugar

For the Chicken:

  1. In a bowl, combine the chopped chicken thigh fillets and the beaten egg.
  2. Gradually add the cornflour to the chicken and egg mixture, ensuring each piece of chicken is well coated.
  3. Heat a wok or large frying pan with oil over medium-high heat.
  4. Fry the chicken in batches until it turns golden and crispy. Remove the chicken from the pan and set it aside on paper towels to drain any excess oil.

For the Chow Mein:

  1. In the same wok or pan, add the sesame oil and heat over medium-high heat.
  2. Add the minced garlic and stir-fry for a minute until fragrant.
  3. Add the sliced onions and spring onions. Stir-fry for a few minutes to get a small char and a bit of caramelization.
  4. Add the cooked noodles to the wok and stir-fry them for a couple of minutes, allowing them to absorb the flavors and develop a slight char.
  5. Now, add the dark soy sauce, light soy sauce, MSG (if using), and sugar. Mix well to coat the noodles evenly.
  6. Finally, add the cooked chicken and bean sprouts. Stir-fry for an additional 2-3 minutes, just enough to heat the chicken and bean sprouts through without making them soggy.
  7. Taste and adjust the seasoning if needed with more soy sauce or sugar.
  8. Serve your homemade Chicken Chow Mein hot, garnished with additional spring onions if desired.
