Ingredients
Pumpkin Dough
- 350g self raising flour
- 200g greek yoghurt
- 3 tbsp pumpkin puree
- 1 egg, optional
Pumpkin Spice Sugar
- 25g butter, melted
- 50g caster sugar
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp mixed spice

- In a large bowl, mix yogurt, pumpkin puree and self-raising flour. Don’t worry if the dough feels sticky at first—that’s perfectly normal.
- Transfer the dough to your work surface and finish mixing it by hand, ensuring all the flour is fully incorporated and there are no dry pockets.
- Let the dough rest for about 15 minutes to help firm it up and make it easier to work with.
- Divide the dough in half and roll each portion into a long log.
- Using a knife, cut the dough into small pieces, then roll each piece into a mini bite-sized ball. Aim for around 15 grams per doughnut for uniformity, but eyeballing is fine too.
- Line your air fryer basket with greaseproof paper to prevent sticking.
- Place the doughnut balls into the air fryer, leaving space between each to allow for rising and puffing up. Brush with a little beaten egg for a golden finish.
- Air fry the doughnuts at 200°C for 10 minutes. They may not brown evenly, but they’ll still be delicious!
