Hot Honey Chicken Tenders
Ingredients
Chicken Brine:
500g chicken breast/tenders
500ml water
1 tbsp salt
1 tbsp sugar
bay leaves
1 tbsp black pepper
1 tbsp Chinese 5 spice
1 tbsp ginger powder
1 tbsp onion powder
1 tbsp garlic powder
Wet Mix:
100g plain flour
1 egg
250ml water
Dry mix:
500g Plain Flour
2 tbsp Chicken Seasoning
1 tsp Chinese 5 spice
2 tbsp Paprika
1 tbsp Black Pepper
1 tsp Onion Powder
1 tsp Ginger powder
1 tsp Garlic Powder

Instructions
- In a small bowl, combine the all brine ingredients and cover in clingfilm and set aside.
- In another small bowl combine all wet ingredients and set the brine and wet mix in the fridge for at least one hour.
- In a large bowl add all your dry ingredients.
- To ensure a crispy chicken pat dry your chicken then coat it in your dry mix, wet mix, then dry mix. Make sure your chicken tenders and fully covered in the wet mix and press firmly into the dry mix to ensure they're ridges. This will make the chicken extra cripsyyy.
- Heat the oil and fry the chicken tenders for 4 minutes on each side or until fully cooked through. Place the chicken tenders on a wire rack or a paper towel-lined plate.
- While the chicken cooks, and the ingredients for the hot honey to a saucepan and cook for 2-3 minutes. Whisk the sauce until nice and smooth.
- Coat the chicken tenders with the hot honey sauce and enjoy!
