Get ready to delight your taste buds with our Chicken Enchiladas, a Tex-Mex classic elevated to new heights of flavor. We craft a rich chipotle sauce from scratch, smothering tender chicken in its smoky embrace before wrapping it all up in warm tortillas. Topped with gooey cheese and baked to golden perfection, these enchiladas are the epitome of seriously good comfort food. Perfect for any occasion, they're guaranteed to satisfy cravings and leave you wanting more.

Ingredients

Chipotle Cream Sauce:

  • 3 regular tomatoes
  • 3 garlic cloves
  • 1/2 brown onion
  • 125ml double cream
  • 2 tbsp cream cheese
  • 50g chipotle paste

Tortillas:

  • 6 Mini White Tortilla Wraps
  • oil for frying

Chicken:

  • 300g chicken breast
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper

Toppings:

  • Mozarella
  • Fresh Parsley
  • White Onion, sliced

Instructions

  1. Boil the tomatoes, garlic cloves, and onion until softened.
  2. In a blender, combine the roasted vegetables, double cream, cream cheese, and chipotle paste. Blend until smooth. Set aside.
  3. Season the chicken breast with paprika, salt, and black pepper.
  4. Grill or pan-sear the chicken until fully cooked. Let it cool slightly, then shred it using two forks.
  5. Preheat your oven to 375°F (190°C).
  6. Heat a bit of oil in a pan and lightly fry each tortilla until soft. Remove excess oil with paper towels.
  7. Add a portion of shredded chicken to the center of each tortilla.
  8. Roll up the tortillas and set aside
  9. In a oven proof dish, pour 1/3 or enough to cover the bottom of the dish then place the tortillas seam-side down in a baking dish.
  10. Pour the remaining chipotle cream sauce over the rolled tortillas.
  11. Top with mozzarella cheese.
  12. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
  13. Once out of the oven, garnish with fresh parsley and sliced onions.
  14. Serve the enchiladas hot, with extra chipotle cream sauce, sour cream, guac on the side if desired.
  15. Optional Step:
  16. If you prefer a crispier cheese topping, you can also place the enchiladas under the grill for a few minutes until the cheese is nicely melted and golden brown.
