Authentic Chicken Enchiladas

Ingredients
Chipotle Cream Sauce:
- 3 regular tomatoes
- 3 garlic cloves
- 1/2 brown onion
- 125ml double cream
- 2 tbsp cream cheese
- 50g chipotle paste
Tortillas:
- 6 Mini White Tortilla Wraps
- oil for frying
Chicken:
- 300g chicken breast
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
Toppings:
- Mozarella
- Fresh Parsley
- White Onion, sliced

Instructions
- Boil the tomatoes, garlic cloves, and onion until softened.
- In a blender, combine the roasted vegetables, double cream, cream cheese, and chipotle paste. Blend until smooth. Set aside.
- Season the chicken breast with paprika, salt, and black pepper.
- Grill or pan-sear the chicken until fully cooked. Let it cool slightly, then shred it using two forks.
- Preheat your oven to 375°F (190°C).
- Heat a bit of oil in a pan and lightly fry each tortilla until soft. Remove excess oil with paper towels.
- Add a portion of shredded chicken to the center of each tortilla.
- Roll up the tortillas and set aside
- In a oven proof dish, pour 1/3 or enough to cover the bottom of the dish then place the tortillas seam-side down in a baking dish.
- Pour the remaining chipotle cream sauce over the rolled tortillas.
- Top with mozzarella cheese.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Once out of the oven, garnish with fresh parsley and sliced onions.
- Serve the enchiladas hot, with extra chipotle cream sauce, sour cream, guac on the side if desired.
- Optional Step:
- If you prefer a crispier cheese topping, you can also place the enchiladas under the grill for a few minutes until the cheese is nicely melted and golden brown.
