Succulent crumbled Cumberland sausages, toasted fennel seeds, and a hint of chili flakes create a flavorful base, while the addition of double cream and Parmesan cheese results in a creamy, indulgent sauce. Tossed with your favorite pasta and finished with a sprinkle of parsley, this comforting creation is both fuss-free and delicious. Elevate your weeknight dining experience with the warmth and simplicity of this burnt sausage pasta – a perfect harmony of flavors for any pasta lover.

Ingredients

  • 75g your favorite pasta(dry)
  • 3 cumberland sausages
  • 1 tsp fennel seeds
  • 2 tsp chilli flakes
  • 1 tsp parsley
  • 50ml double cream
  • 50g parmsesan cheese
  • a ladle worth of pasta water

  1. Start by cooking the pasta according to the package instructions. Remember to salt the boiling water for extra flavor.
  2. While the pasta is cooking, heat a large skillet or frying pan over medium heat.
  3. Remove the casings from the Cumberland sausages and place the sausage meat into the hot skillet. Cook the sausage, not breaking it apart until brown this should take around 2-3 minutes.
  4. Once browned, start breaking it apart with a spoon, until it's browned and cooked through.
  5. Add fennel seeds and chili flakes to the sausage, stirring to combine. Allow the spices to toast for about a minute to release their flavors then pour in the double cream.
  6. Once the pasta is cooked, reserve a ladle's worth of pasta water before draining the pasta.
  7. Add the drained pasta and pasta water to the skillet with the sausage mixture. Toss everything together, coating the pasta evenly with the sausage and spices.
  8. Sprinkle parsley and parmesean over the pasta and toss once more.
  9. Serve immediately with more parmesean and enjoy!
