Spicy Burnt Sausage Pasta

- 75g your favorite pasta(dry)
- 3 cumberland sausages
- 1 tsp fennel seeds
- 2 tsp chilli flakes
- 1 tsp parsley
- 50ml double cream
- 50g parmsesan cheese
- a ladle worth of pasta water

- Start by cooking the pasta according to the package instructions. Remember to salt the boiling water for extra flavor.
- While the pasta is cooking, heat a large skillet or frying pan over medium heat.
- Remove the casings from the Cumberland sausages and place the sausage meat into the hot skillet. Cook the sausage, not breaking it apart until brown this should take around 2-3 minutes.
- Once browned, start breaking it apart with a spoon, until it's browned and cooked through.
- Add fennel seeds and chili flakes to the sausage, stirring to combine. Allow the spices to toast for about a minute to release their flavors then pour in the double cream.
- Once the pasta is cooked, reserve a ladle's worth of pasta water before draining the pasta.
- Add the drained pasta and pasta water to the skillet with the sausage mixture. Toss everything together, coating the pasta evenly with the sausage and spices.
- Sprinkle parsley and parmesean over the pasta and toss once more.
- Serve immediately with more parmesean and enjoy!
