Ingredients
250g macaroni, dried
100g butter
25g flour
300ml double cream
600ml milk
salt and pepper to taste
3 tsp parsley
3 tsp paprika
3-4 tsp garlic paste
150g smoked cheddar cheese
150g Red Leicester cheese
100g mozzarella
Ingredients
Instructions
1. In a large pan boil macaroni pasta.
2. In a separate pan melt butter.
3. Once melted, add flour and whisk frequently, this is the beginning of your roux however this will be a lot less firm as we want to keep our sauce creamy and not pie like
4. When combined add all your double cream and whisk frequently to ensure no flour lumps.
5. Gradually add half your milk, adding it all at once will result in lumps which we don't want, and whisk until a creamy sauce.
6. Season with salt, pepper, paprika, parsley and garlic and mix into sauce.
7. If your sauce gets too thick add milk as necessary.
8. Add 50g of each cheeses and mix until smooth.
9. Voila Cheese sauce created!
10. Combine all your sauce and mix with pasta.
11. Add half of a pasta and sauce mixture into a large enough oven proof pan (I used one 8 inch square pans) then 50g of each cheese then the remaining pasta and top with remaining cheese.
12. Bake in oven until cheese has melted and golden brown I used the temperature 200 degrees celsius.
