These Garlic Parmesan fries are everything you look for in a fry: crispy and garlicky on the outside with soft, fluffy potato goodness on the inside. Whether baked, air-fried, or traditionally fried, they pack a big punch of flavor while being incredibly easy to make.

Start by cutting your potatoes into thin strips, wedges, or steak fries, depending on your preference. Coat them with a bit of oil and season with minced garlic and grated Parmesan cheese. If you're baking, spread them out on a baking sheet and pop them in the oven until golden brown and crispy. For air frying, arrange them in a single layer and cook until they achieve the perfect crunch. If you prefer frying, heat your oil to the right temperature and fry the potatoes in batches until they’re golden and crispy.

These fries are a fantastic side dish for anything from burgers to steaks. If you're short on time, this recipe works just as well with frozen fries. Do I have to use fresh garlic?

I've made this with fresh and jarred garlic and both works! I've not tried with garlic powder but I think the flavour would be too weak.

Can I put these in the airfryer?

Skip the cornflour for oil then place the potatoes in the basket and cook for 15 minutes at 200°C or 390°F . Shake/flip the potatoes and cook an additional 8-10 minutes or until crisp.

What potatoes can I use?

Russet potatoes are commonly used for French fries due to their high starch content and low moisture, which helps them become crispy when fried. Yukon Gold potatoes are also a good choice for a slightly different texture and flavor. I used Maris Piper potatoes and that worked best!

Will frozen chips work with the garlic parmesan sauce?

Yes, cook your frozen chips as package instructions then add the garlic parmesan sauce.

Ingredients

  • 6 large potatoes (around 1kg), washed
  • 50g unsalted butter
  • 50g parmsan cheese, grated
  • 2 tbsp cornflour
  • fresh parsley, chopped finely
  • sunflower oil (or any frying oil)
  • 4 garlic cloves, minced

  • 6 large potatoes (around 35oz), washed
  • 1.8oz unsalted butter
  • 1.8oz parmsan cheese, grated
  • 2 tbsp cornflour
  • fresh parsley, chopped finely
  • sunflower oil (or any frying oil)
  • 4 garlic cloves, minced

Instructions

  1. Wash and cut your potatoes, trim both ends of the potato to create flat surfaces.
  2. If you want perfectly rectangular fries, you can cut a thin slice off each side of the potato to create a rectangular shape.
  3. Place the potato on one of its flat sides, and cut it into 1/4 to 1/2 inch thick planks (depending on your preferred fry thickness).
  4. Stack the planks and cut them into 1/4 to 1/2 inch thick sticks to form the fries, if unsure refer to my video.
  5. Place the cut potatoes in a bowl of cold water and ice for about 25-30 minutes. This helps remove excess starch and makes the fries crispier.
  6. Drain the potatoes and pat them dry using a clean kitchen towel or paper towels.
  7. In a large bowl, add the potato fries with the corn flour until they are evenly coated. This will help create a crispy exterior when frying.
  8. In a large skillet or deep fryer, heat the sunflower oil to around 350-375°F (175-190°C).
  9. Carefully add a batch of coated potato slices into the hot oil, ensuring not to overcrowd the pan. Fry them until they turn golden brown and crispy, about 10-15 minutes depending on the thickness. Use a slotted spoon to remove the fries and place them on a plate lined with paper towels to drain excess oil.
  10. In a separate bowl, mix the grated Parmesan cheese,minced garlic, chopped fresh parsley into the melted butter then add a pinch of salt and pepper, and set it aside.
  11. While the fries are still hot, drizzle the melted butter and coriander mixture over them. Sprinkle some more Parmesan cheese generously over the fries. The heat of the fries will help melt the cheese slightly.
  12. Repeat the frying and seasoning process with the remaining potato slices.
  13. Serve your Parmesan Fries immediately as a delightful and flavorful snack or side dish.
  14. Enjoy your homemade Parmesan Fries with a burst of cheesy, garlicky goodness!
