About this recipe
Cheesy Jamaican patties are savory pastries with a flaky, golden crust filled with a blend of melted cheese, minced meat, vegetables, and Caribbean spices. They are a popular and delicious snack or meal option enjoyed for their unique flavors and satisfying texture.
Ingredients
Pastry
- 450g Plain Flour
- 100g cold butter
- 115g cold Lard (100g in the dough and 15g grated in the layers)
- 1 tbsp Curry Powder
- 1 tbsp Turmeric
- 1 tbsp Salt
- 200ml ice cold water + 15ml milk
- 1 Egg
Filling
- 500 g Minced Beef
- 1 Onion, finely chopped
- 1 Carrots, grated
- 1 tsp salt
- 1 tbsp pepper
- 1 tsp ground ginger
- 2 tsp all purpose seasoning
- 1 tbsp soy sauce
- 1 tbsp ketchup
- 1 tbsp browning
- 2 tbsp paprika
- 2 tsp garlic paste
- 50g breadcrumbs
- 150g cheddar cheese

Instructions
- In a large bowl, combine the plain flour and the spices for your dough, then mix until evenly distributed to ensure no lumps of spices.
- Add in 100g diced butter and 100g diced cold lard - you want this cold to ensure extra crispness.
- Pour in the ice-cold water and milk.
- Knead in all the ingredients to form a dough, don’t worry if it’s not a smooth dough as you want some visible chunks of butter and lard showing.
- Roll out the dough to size 1cm on a floured surface.
- Grate 7.5g of frozen lard onto the dough before folding the top and bottom over, you want it to look like a book after you’ve finished
- Repeat step 7 and then pop it in the fridge to allow the dough to rest.
- Meanwhile make the filling, Heat up a pan with oil then add the chopped onions, grated carrot and cook until softened. Then add your browning, ketchup, soy sauce and the spices (all but paprika and ginger) and mix until combined.
- Then add the mince, breadcrumbs, paprika and ground ginger and cook all the filling ingredients together till brown, your mixture with thicken up and that’s what we’re looking for!
- Leave to cool down.
- Roll out the dough back out to around size X width and cut out large circles (I just used a bowl!)
- Scoop around 1-2 tbsp of the filling on to the cut-out dough making sure you leave enough space around the edge to close the patty and then add some sliced cheddar on top.
- Fold over the dough over to create a pasty.
- Bake in the oven for 30 minutes at 180 degrees celsius
