Juicy Garlic Roast Chicken

About this recipe
Nothing brings people together like a roast dinner. I partnered up with Our Place on their new Ovenware Set to create something special.
Ingredients
Compound Butter:
125g butter
2 springs of rosemary
1 tbsp salt
2 tbsp black pepper
2 tbsp thyme
2 tbsp parsley
1 tbsp garlic puree
Roast Chicken:
1 Medium Sized Chicken (1-1.2kg)
2 tbsp chicken seasoning

- Heat oven to 200C/180C fan/gas 6.
- In a small bowl, mash cubed butter with all listed seasoning. Mix everything together with some seasoning and set aside.
- With scissors cut the spatchcock out of the chicken then thoroughly wash the chicken with half a lemon and place it in Main Bake
- Use your fingers to loosen the chicken skin away from the breast, then push most of the butter mix into the gap.
- Rub the rest of the butter all over the outside of the chicken. Lastly, sprinkle extra all-purpose seasoning and rub it into the chicken.
- Set the chicken on the middle shelf for 45-90 minutes, basting with the buttery juices after about 40 mins. If your chicken is browning a lot 25 minutes in cover within tinfoil and remove 10 minutes before the end of cooking time.
- When the chicken is dark golden, crispy-skinned and the juices run clear, remove from the oven and leave in the tin for 5 mins.
