About this recipe

Creamy garlic pasta is a luscious blend of tender pasta bathed in a rich, velvety sauce. With just five ingredients – garlic, parmesan cheese, cherry tomatoes, and pasta – it's a quick and indulgent treat that's bursting with satisfying flavors and all made in 20 minutes.

Ingredients

  • 85g of your favourite pasta
  • 1 tbsp tomato paste
  • 10-12 cherry tomatoes
  • 2 tbsp chopped garlic
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp chilli flakes (optional)
  • as much parmesan as you fancy :)

  1. Cook the Pasta: Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente but DO NOT THROW AWAY the pasta water - this is vital in the recipe
  2. While the pasta is cooking, In a large pan, heat olive oil over medium heat. Add the chopped garlic and sauté for about a minute until fragrant.
  3. Add the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften and release their juices.
  4. Push the tomatoes to the side of the skillet and add the tomato paste. Stir it around for a minute to cook off the raw taste.
  5. By this time your pasta should be al dente take a ladle worth of pasta water and pour it to your tomato mixture this will ensure the pasta sticks to the sauce, it'll also make the tomatoes more sauce like.
  6. Once your sauce is sauce-y, toss the cooked pasta into the pan with the tomato paste and cherry tomatoes. Mix everything together, ensuring the pasta gets coated with the flavors.
  7. Sprinkle black pepper and chili flakes (if using) over the pasta. Adjust the amount of chili flakes based on your spice preference.
  8. Grate Parmesan cheese directly over the pasta, adding as much as you desire. Gently mix the pasta again to incorporate the cheese and create a creamy texture. The heat from the pasta and skillet will melt the cheese and create a delicious sauce.
  9. Plate the creamy tomato garlic pasta in bowls. You can top it with additional Parmesan cheese and a sprinkle of fresh chopped herbs if you have any on hand.
  10. Your creamy tomato garlic pasta is ready to be savored. Each forkful brings together the tanginess of the tomatoes, the richness of the cheese, and the warmth of the garlic and spices.

Note: Feel free to customize the recipe by adding cooked chicken, sautéed vegetables, or your favorite protein!
