Chinese Salt and Pepper Wings

These wings are always the last add-on in your takeaway order that you never regret. Make sure to make these the next time you crave a Chinese: Crunchy, spicy and delicious!
Ingredients
Chicken Wings:
1kg chicken wings
1 tsp sea salt
1 tbsp white pepper
2 tbsp Chinese 5 spice
1 tsp garlic granules
1 1/2 tsp black pepper
2 tbsp shaoxing wine or rice wine vinegar
Batter:
150g corn flour
100g plain flour
1 tbsp white pepper
Toppings:
2 red chilli's, finely sliced
2 green chilli's, finely sliced
bunch of spring onions
1 tsp garlic paste

Instructions
- Season your chicken wings with all seasonings listed above and leave to marinate for a least 30 minutes or overnight.
- In a small bowl combine your cornflour, plain flour and white pepper.
- Add your marinated chicken wings to the flour mixture and toss until fully coated in flour, if you want this extra crispy, add a little amount of water for the batter to be like a thick paste.
- Heat your oil over high heat until hot (you can test by sticking the end of a wooden spoon or chopstick in the oil – if bubbles form around it, it’s hot enough) then fry for 5-7 minutes.
- In a large wok, fry garlic paste and chillis until fragrant then mix in your chicken wings end enjoy!
