This Chicken and Pineapple Traybake recipe is ready in under 30 minutes – it's that quick and easy. Simply season the chicken with chipotle paste, hot honey (or regular honey if you prefer), salt, and BBQ sauce. Halfway through cooking, drain the excess sauce, add your pineapple chunks, and cook on super high heat to char the pineapple, giving it that delicious smoky flavor.

I'm pescatarian can I use fish instead?
Yes! Cod, Haddock or even Salmon would work great.
What is the difference between hot honey and normal honey?

Do I need canned pineapple or fresh?
For convience, I used canned pineapple but if you have fresh that totally works too!

- 4 Chicken Thighs Fillets
- 4 tsp chipotle paste
- 2 tbsp honey
- 3 tbsp bbq sauce
- 100g pineapple, cut into bitesized pieces

Instructions
- Preheat your oven to 250°C (482°F).
- On a lined ovenproof tray, mix together the chipotle paste, honey, and BBQ sauce.Coat the chicken thigh fillets thoroughly with the mixture.
- Bake in the preheated oven for 10 minutes.
- After 10 minutes, drain any excess sauce from the tray (reserve this for later it's packed with flavour).
- Add the bite-sized pineapple pieces to the tray with the chicken and return the tray to the oven and bake for an additional 15 minutes, allowing the pineapple to char slightly and the chicken to cook through.
- Once done, remove from the oven and let it rest for a few minutes.
- Serve the chicken and pineapple with rice, potatoes, or your preferred side.
