Do I like Avocado? No. Do I love guacamole? Yes!

Ingredients

  • 1 large tomato
  • 1 1/2 avocados, very ripe
  • 1 large lime
  • handful coriander  
  • 1 small red onion (or half a large one)
  • tortilla chips, to serve
  • salt, pepper and chilli flakes

Instructions

  1. Use a large knife to dice tomato, red onion and coriander and set them aside.
  2. Halve and stone the 1 1/2 avocados and use a spoon to scoop out the flesh into the bowl with the tomato.
  3. In a other bowl add your avocado and mash with a whisk or masher, I like mine still chunky.
  4. Juice your lime, and add a handful of roughly chopped coriander, finely chopped small red onion and , then season with salt and pepper.
  5. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover with cling film and chill until needed.
