Smoky Potato Wedges

Ingredients

3 potatoes

3 tbsp paprika

1 tbsp garlic purée

1 tsp parsley

1 tbsp garlic granules

salt and pepper to taste

25ml oil

  • Cut your potatoes into wedges I like to leave my skin on for an extra crispy effect.
  • In a pan of boiling water add 1 heaped teaspoon of baking powder, this helps to break down the pectin in your potato resulting in it being browner and crispier, and boil for 10 minutes.
  • On some tea towels pat any excess water off.
  • In a small bowl, add all remaining ingredients and combine them together.
  • Add to a baking tray with baking paper, tinfoil tends to stick to the potatoes, and bake for 25-35 mins at 220 degrees Celcius.
