1kg chicken thighs
250g salted butter, softened
1 tbsp black pepper
handful thyme and rosemary
8 garlic cloves, pulsed
4 lemons, sliced
1 tbsp chicken seasoning

- Preheat your oven to 200 degrees Celsius.
- In a bowl, mix together the softened butter, black pepper, pulsed garlic cloves, rosemary, thyme and chicken seasoning.
- Pat the chicken thighs dry with paper towels and season them with salt.
- Gently loosen the skin on each chicken thigh and spread a generous amount of the butter mixture under the skin. Make sure to coat the chicken evenly.
- Place a few lemon slices under the skin with the butter mixture for added flavor.
- Scatter the remaining lemon slices in the bottom of a baking dish and place the seasoned chicken thighs on top.
- Cover the baking dish with foil and bake in the preheated oven for the first 20 minutes.
- After 20 minutes, remove the foil and increase the oven temperature to 250 degrees Celsius.
- Continue baking for an additional 10 minutes or until the chicken thighs are golden brown and the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius).
- Once done, remove the chicken from the oven and let it rest for a few minutes before serving.
